Miso adds richness to chicken salad | Lifestyle

From start to finish: 30 minutes

2 inch ginger, peeled and sliced ​​thinly

⅔ Cup sliver almonds, toast, split

Kosher salt and ground white pepper

½ cup of grape seed or other neutral oil

3 cups of finely chopped chicken (about 1 3 lb chicken)

6 medium green onions, sliced ​​(½ cup)

Loosely stuff 1/2 cup of coriander leaves and chop finely

½ English cucumber, half length, sow and slice thinly (1 cup)

In a blender, mix water, miso, ginger, 1/3 cup of almonds, lime juice, mustard, honey and 1/2 teaspoon of white pepper. Blend for about 1 minute until smooth. Add oil and blend for about 1 minute until the dressing is thick. Transfer to jar, cover and refrigerate for at least 30 minutes or up to 4 days.

In a large bowl, add chicken, green onions, coriander, cucumbers and the remaining 1/3 cup almonds. Add 1 cup of dressing and toss and mix. Adjust the taste with salt and pepper. Serve with the rest of the dressing next to it.
